The Dalmore has introduced a new expression to its core ‘Principal Collection’ – The Dalmore Aged 17 Years. This release from the Highland Single Malt Whisky distiller is a further exploration of Sherry Maturation.
The Dalmore Whisky Makers, renowned for the use of Sherry in some of their whiskies, have carefully created The Dalmore Aged 17 Years to offer a more enriched experience.
It demonstrates The Dalmore’s expertise with Sherry maturation, and their longstanding relationship with partner, González Byass, from whom The Dalmore exclusively source a trio of fine casks, used in this Single Malt.
The Dalmore Aged 17 Years, a rich and decadent whisky, is first matured in American white oak ex-Bourbon barrels, creating a base of soft vanilla and honey notes. It is then finished in a trio of casks – Amoroso, rare Apostoles, and Matusalem Oloroso – which have been carefully selected from one of the finest Sherry makers, González Byass.
Each cask imparts its own characteristics to the whisky, enriching the spirit. Apostoles brings structure, depth and savoury complexity, while the Amoroso bridges savoury and sweet, offering harmony and balance. Matusalem Oloroso adds weight, roundness, and lingering sweetness.
The Dalmore has employed Sherry cask maturation for centuries. These casks are found to enhance and balance the unique chocolate, orange and soft spice notes of The Dalmore’s house style. The three exclusive Sherry casks used in this expression are cherished for their age and rarity. They spend decades maturing in Spanish Bodegas, infusing the wood with deep, sweet, and intricately layered flavours that, in turn, enrich The Dalmore spirit.
The Dalmore Aged 17 Years combines aromas of Seville orange, rich orchard fruit, and wood spice on the nose. On the palate, poached pear, forest berries, sweet toffee, and orange marmalade bring the spirit to life, before the finishing notes of dark chocolate orange, rich dried fruit, and lingering hints of cinnamon and nutmeg complete the ensemble.
The Dalmore Aged 17 Years is available in a luxurious purple box, featuring a magnet closure for a smooth unboxing experience. The whisky itself is housed in The Dalmore’s signature silhouette glass bottle, adorned with the iconic stag emblem.
