Smoked Pineapple Tequila Is the Drink You Didn’t Know You Needed

If you’re thinking that you need to eat pineapple to celebrate International Pineapple Day (no, really, it exists) you’re wrong; we think drinking it is a much better option.  And combining pineapple with tequila makes that prospect even more interesting.

If, like me, your main experience of tequila is trying to remember which order the lime, salt and tequila shot go, then you really are missing out.

There are a growing number of flavoured tequilas on the market, and many among the bartending community are tipping it as the next trend in cocktails. So, ahead of International Pineapple Day (seriously, it’s real), we’ve been sampling Rooster Rojo Smoked Pineapple Anejo Tequila – the only smoked pineapple-infused Anejo tequila in the world.

Crafted in small batches at the base of the Volćan de Tequila in Mexico, this 100% blue agave Mexican tequila is intended to be sipped and savoured. The Master Distiller took over a year to test and taste different varieties of pineapple to bring this spirit to life, creating a smooth, 38% ABV spirit that almost tastes like a cocktail in itself.

Make a margarita with smoked pineapple tequila
Smoked Pineapple Margarita
  • 45ml Rooster Rojo Anejo Smoked Pineapple
  • 30ml Fresh lime juice
  • 15ml Agave Syrup

Combine all of the ingredients in a shaker with ice, and then strain into a fine glass. Garnish with a lime wheel and, if you wish, an optional rim of salt.

Finos Margarita Cocktail
  • 45ml Rooster Rojo Anejo Smoked Pineapple 
  • 30ml Orange liqueur
  • 30ml Pineapple juice
  • 15ml Fresh lime juice
  • 2 dashes Angostura bitters 

Combine all ingredients except the Angostura bitters in a shaker with ice, and then shake vigorously for 15 seconds to chill. Strain into a glass (preferably a Collins glass) and add two dashes of Angostura bitters. Garnish with a half rim of flaked salt sea salt and a lime wheel.
