A dollop of something sweet or spicy can really lift your Christmas foods, and Rosebud Preserves has a Christmas collection full of traditional flavours and creative combinations.
Rosebud Preserves has been making jams, marmalades, chutneys and jellies at Masham, North Yorkshire, since 1989. The founder, Elspeth Biltoft, creates recipes using natural ingredients wherever possible, with traditional British flavour influences.
This year, some new products are in the lineup, starting with Bramley Apple and Cider Sauce — a perfect accompaniment to roast pork or a cold meat platter on Boxing Day. It combines a mix of Bramley and Braeburn apples with Ampleforth Abbey cider and an infusion of sugar and lemon juice. We’ve tasted it, and, despite the recipe’s simplicity, the sweet and sharp flavours are well balanced, with a lovely freshness that allows the apples to take centre stage.
Greengage Fruit Cheese is a new addition too. Following the success of its Damson Fruit Cheese, Rosebud created a greengage variety, using Cambridgeshire greengages with just a little cane sugar and lemon juice to create a rich flavour. This unique preserve is an excellent addition to a cheese platter and is particularly stunning when paired with blue cheese.
As well as preserves, Rosebud has also launched a new Elderflower Gin Liqueur in time for Christmas. The spirit that forms the basis of the liqueur is distilled by Spirit of Masham, keeping the production local to Rosebud. The flavour comes from the abundance of wild elderflowers that are gathered locally. Sugar and water are combined and, once cooled, mixed with the elderflowers and pressed into a syrup. After 10-14 days, the syrup is strained, the flowers discarded and the liquid combined with the gin. The result is a sweet, fragrant liqueur that makes a great long drink or even a syrupy dessert topping — perfect for Christmas.
There are plenty of Rosebud
favourites in the range, too, with Traditional Piccalilli, Spiced Plum Chutney and (assuming you get your order in before 12 December to hit the last delivery date for Christmas) the fabulous Almond and Orange Mincemeat for those perfect mince pies.
